Cracker Barrel Crackers Recipe 1.1kg (2.2lbs) cream cheese, softened 1/2 teaspoon salt 1 cup (200g) all-purpose flour 1 cup vanilla milk 1 teaspoon vanilla extract (optional) 1/4 teaspoon baking powder 1/8 teaspoon baking soda 1/6 teaspoon salt 2 eggs 1 1/3 cups (250g) butter 1/1 cup (80g) sugar 1 teaspoon pure vanilla extract Directions Heat cream cheese and salt in a large saucepan over medium heat until melted.
Add vanilla milk, sugar and vanilla extract.
Simmer until the mixture thickens.
Stir in eggs and whisk to combine.
Remove from heat.
Place in a blender and puree until smooth.
Divide into 1 large bowl.
Add the cream cheese mixture, egg, vanilla and vanilla extracts, whisking constantly to combine to form a smooth batter.
Add butter, and stir until the batter forms a hard lump.
Fold in sugar, and mix until just combined.
Add cream cheese.
Divide between two greased and lined 9-inch pie pans.
Bake for 40-50 minutes until golden brown.
Cool for 15 minutes, then transfer to a cooling rack to cool completely.
